The CharGriller Smokin’ Pro is a very flexible Horizontal Smoker / Grill. There are two parts, a main chamber that can hold food for direct or indirect cooking, plus smoking with the Side Fire Box (SFB). The SFB is used to hold charcoal and wood for smoking, and can also be used as a small grill in its own right. This makes the CharGriller a very versatile grill. Temperature control in the Main Chamber is accomplished by adjusting two vents. One is in the side of the ash drawer at the ned of the SFB and the other is a cap at the top of the chimney in the main chamber. The amount of lit charcoal used in the SFB also has an affect on the temperature range the smoker runs in. Using about 1/2 of a Weber charcoal chimney full of lit coals allows the CharGriller to run at 225 degrees. Once you have a few smokes under your belt, it is very easy to keep the CG at 225 for hours at a time with little to no adjustment.
